Coconut Breakfast Bites

^^Feel free to use this cute little button I'll admit something. I didn't think these were going to turn out. I was originally following a recipe and skipped the part where I was supposed to beat the eggs till they were fluffy. Turns out that was a fairly integral part of the recipe as these were originally supposed to be cookies. But you know what, I'm okay with that!!!! :) I couldn't believe how much they changed my breakfast the next day. Let me begin by saying this: These are made with READ MORE

Desserts. Am I right? You know what I mean if you`re Gluten Free and Diabetic. Essentially the carb/sugar ratio is out of control in most packaged products. Unfortunately,  it's difficult to avoid sugar in most cases. Sure you can add, subtract, and substitute sugars with all kinds of things in baking... but really, it usually comes with consequences. You always here the downsides. This sweetener gives you gas - or cancer. This one can upset your stomach. This one leaves an aftertaste. This one READ MORE

Breakfast/Lunch “Shells”

^^Feel free to use this cute little button here! To be honest, I'm not really sure what to call these. They really are just "Shells". It's kind of a pie crust meets quiche crust. Cinnamon Roll Pancakes

I only just recently discovered the greatness that is cinnamon roll pancakes. Again, super easy. I made these last night and offered some to my boyfriend who was on a Skype call. You only have to add this easy concoction to your pancake mix. Click on the link below to see my favorite pancake recipe. The BEST GF READ MORE

I'll have to begin by noting that these were for a St. Patty's day party to which I was supposed to arrive with dessert. This is why the cookies are green. I'm positive that I will be making these again SOON because they are absolutely amazing (next time they will be an amazing light golden color). They were gone in a second after dinner at this small get-together.  What can I say... I'm a total dessert person. My sweet tooth honestly has it's own personality at this point and doesn't care at READ MORE
